Stuffed Zucchini Boats

Ingredients

  • 1 package Pound of Ground® Ground Beef Crumbles®
  • 4 zucchini (can substitute summer squash)
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 1 small jar marinara sauce
  • 1 cup shredded mozzarella cheese
  • Italian seasoning

Instructions

  1. Preheat oven to 400°F
  2. Prepare Pound of Ground® ground beef according to package directions, drain drippings. Add onion and garlic and sauté. Season with Italian seasoning.
  3. Cut zucchini in half, length wise. Use a spoon to remove seeds.
  4. Top zucchini boats with Crumbles® mixture, marinara sauce, and shredded mozzarella.
  5. Place on a 9x 13 baking sheet and cook for 20 – 25 minutes.
